Yes, I'm a nutritionist. Yes, I know coffee is probably not the best thing for my liver. But I love it. I can't help myself. What's not to love?!
Truth be told, I have a cup every morning. Most times, it's decaf, but occasionally a half calf. If I'm at a friend's house and all that's available is regular, I'm still in... I'll go easy on it.
I drink my coffee black, so I'm kind of a snob about it, if I'm being honest. I like it rich and dark (I'd love to say "like I like my men" but my hubby is about as fair-skinned as it gets, and certainly, we're not yacht-hunting anytime soon... so coffee it is... rich and dark...).
Panera is my favorite; so much so, that they see me a bit more regularly than they should. I carry my insulated stainless steel mug to keep it hot, so I can savor every last drop of it, just as hot as the first, throughout the morning I'll share the brands I make at home another time, but today, I want to share a recipe for a better coffee creamer. I rarely use creamer, but I know many of you do, and I'd love you to have something that's got quality ingredients that won't spike your blood sugar by turning your coffee into dessert (in some cases, multiple desserts, if you read the label).
So here's an easy recipe. I hope you enjoy it.
Creamy Cinnamon Vanilla Coffee Creamer
1 can whole-fat, coconut milk (not light!)
2-3 teaspoons vanilla extract
1-2 teaspoons cinnamon
That's it! Mix it altogether in a glass jar and pour it into your coffee each morning. It's really rich and luxurious, and you'll never miss the sugar. The coconut milk is slightly sweet so just enough to do the trick. At least in my humble opinion.
Another great option is to add a couple of shakes of cinnamon to the coffee grinds when you're brewing your coffee. Less is more, to start. Work your way up until it's perfect.
